- Take 200 gms paneer
- Prepare 2 +2 tbsp butter
- Get 1 tbsp cooking oil
- Prepare 1"+ 1" piece ginger(1" for julienne)

- Prepare 4 tomatoes
- Get 20 cashew nuts soaked in 1/2 cup hot water
- Get 1 Bay leaf
- Get as per taste salt

- Prepare 1 tsp kasuri methi
- Take 2 Green chillies
- Get 2 tbsp. chopped coriander leaves
- Prepare 1&1/2 bowl water
- Take 2 tbsp fresh cream
Along with crisp rotis it is a perfect meal for any occasion. This is a Sanjeev Kapoor exclusive recipe. Add ginger paste and garlic paste. Stir cashews, ground red chiles, cumin, coriander, and garam masala into onion mixture.
Instructions to make Butter Masala Paneer:
- Soak cashew nuts in hot water for 20-25 minutes. Then discard water and Grind it to a smooth paste.
- Wash and chop tomatoes roughly and then grind it to a smooth paste/puree. Wash peel and crush ginger and garlic.
- Cut paneer in cubes. Chop 1 piece thin ginger julienne.
- Heat butter in a heavy bottomed karahi. Add 1 tb spoon cooking oil. It's added to avoid butter getting brown. Add bay leave and fry it for 1 minute.
- Add crushed ginger garlic and saute it for 2-3 minutes. Then add tomato puree, mix it and cook on low flame.
- Cook tomato puree on low flame till butter start leaving sides of karahi. Now add cashew nut paste and remaining butter and mix it.
- Cook this mixture on low flame while stirring continuously till it turn thick. Now add salt, Kashmiri mirch, paprika, and crushed kasuri methi and mix well. Add water and let the mixture come to boil.
- Add paneer cubes and stir and cook for 2 minutes. Add half of cream and mix.
- Now add chopped coriander leaves and 1 slit green chilli.
- Serve hot garnished with chopped coriander leaves, remaining cream and julienne with paratha or chapatti.
Put a tablespoon of oil into a large lidded frying pan over a medium heat and, when hot, add the cubes of paneer. Fry for a couple of minutes until golden on all sides, turning regularly, then remove to a plate. Put the butter into the same pan over a medium heat.
