Heat a pressure cooker pan with oil, add the ingredients listed under "To temper" in the given order. Once the cashews turn golden, add the onion and crushed ginger, garlic, chilli. Saute until the onion turns translucent. Now add the mint and coriander leaves and start sauteing until the onions turns golden.

Instructions to make Paneer Biryani in pressure cooker:
  1. Rinse and soak the rice in 2 cups of water for 20 minutes. Drain water after 20 mins.
  2. Set the cooker in gas to Saute heat 1/2 cup oil Add sliced onions and fry for 5-7 minutes or until the onions are lightly brown or caramelized. Take out the onions.
  3. Add 1 tablespoon ghee, cumin seeds, cardamom, cloves, black pepper, bay leaves. Cook for 30 seconds.
  4. Add curd then add chopped onions and all the veggies (carrots, green Beans,peas,potato and roasted paneer).
  5. Use 1/2 cup of water if needed. Add ginger, garlic, turmeric, red chili powder, garam masala and 1 teaspoon of salt. mix well.Add mint, rice and 2 teaspoons salt. Add 2 cups of water. Mix well, making sure most of the rice is under water.on layer of rice sprinkal some biryani masala and food colour.
  6. Now repeat the process of layering one more time.
  7. Close the cooker lid. And open after the one whistle when cooker is cool completely.
  8. Serve paneer Biryani with raita or salan.

Cover the cooker with the lid with whistle attached. It is ok if the cooker whistles in between. Open the cooker once the pressure settles down and garnish with some grated paneer,fried onions and chopped coriander leaves.
