How To Make Shahi Paneer without onion and garlic. first of all chop paneer into pieces , no need to fry or saute in paneer in oil or ghee. now heat ghee or oil in a pan and add cumin seeds and the whole spices in the oil. when spices start to crackle then add the grated bottle gourd and saute for a minute. now cover the pan with a lid and let the gourd soften a bit. Shahi paneer is a delicious creamy gravy made with paneer. The creaminess comes from onions, nuts and curd. This is one of the popular and rich paneer recipe.

Steps to make Shahi paneer:
  1. Heat ghee in a pan add sliced onion fry till golden brown,keep aside in the same pan saute badam,kaju kishmish.keep aside.in the same add chopped tomato, whole garam masala saute, add red chillies and khuskhus,saute,
  2. Let the tomato mixture cool,grind it to fine paste with onion and kaju badam,kishmish.
  3. Heat ghee in the same pan add tej patta add the masala cook till it leaves oil,chop paneer into cubes and add, and water to get the right consistency of the gravy.
  4. Whole garam masala I used 1 big elachi(black),1tspblack pepper.3small elachi(green).4long(cloves).tej pasta,1tsp sauce,2inch dalchini,1tsp shahi zeera.

Shahi means royal and as the name suggest this is a royal paneer dish. The original shahi paneer is from Mughalai cuisine. It has a white gravy made from onion and yogurt.
