Instructions to make Shahi paneer:
- Heat 1 tbsp butter and add 1 cup onion chopped,1 cup tomato chopped, 2 pods cardamom, 1 inch cinnamon,1 pod black cardamom and 4 black pepper, almonds, cashew,magaz seeds, ginger, garlic, salt and 1 cup water.
- Cover and boil for 20 minutes or until it softens completely.
- Cool completely and transfer to a blender. blend to smooth paste.
- Sieve the puree making sure the puree is smooth and silky. keep aside.
- In a large kadai heat 2 tbsp butter and saute 1/2 tsp shahi jeera.
- Add 1/4 tsp turmeric, 1 tsp kashmiri chilli powder and coriander leaves.saute slightly until the spices turn aromatic.
- Now add paneer cubes and mix well.
- Add prepared puree and mix well.
- Add 1/2 cup cream and mix until everything is well combined.
- Now add saffron water and mix well.
- Cover and simmer for 5 minutes or until flavours are absorbed well.
- Now add 1/2 tsp kasuri methi. mix well.
- Enjoy shahi paneer with roti or garlic naan.
Shahi means royal and as the name suggest this is a royal paneer dish. The shahi and creamy paneer dish is Mughlai cuisine.
