The ingredients needed to make Kalakand:
- Prepare 250 gm Paneer
- Take 1 tin Condensed milk
- Prepare 1/2 cup Milk
- Take 1/4 cup sugar
- Make ready 2 tbsp Milk powder
- Make ready 1 tsp Elaichi powder
- Get as needed Chopped pistachios (for garnishing)
Milk is curdled a bit with the use of alum or curd and simmered on a low flame till it thickens considerably. There are other methods too of making kalakand. Traditionally, Kalakand is made from coagulated full fat milk and sugar. The milk is curdled to get Indian cottage cheese (paneer) and mixed with sugar.
Steps to make Kalakand:
- Grate the Paneer and mix it with milk powder and condensed milk, in a heavy bottomed kadhai. Heat this mixture and continuously keep stirring.
- Once the mixture gets a bit thick, add the milk and sugar. Keep stirring while the mixture cooks on a low flame.
- Add the elaichi powder and mix. Keep cooking the mixture until it leaves the sides of the kadhai and thick enough. Pour it into a greased tin or utensil, and garnish it with chopped pistachios.
- Let it cool and cut it into pieces.
This mixture is then cooked on medium heat till all the moisture evaporates and it attains a moist and grainy-crumbly consistency. Kalakand is a type of barfi (milk-fudge) which is a dense milk-based Indian sweet which has a soft, moist, juicy, delicately grainy, and melt in the mouth texture. It has a subtle flavoring of cardamom and slightly nutty and crunchy texture from almonds and pistachios toppings. Kalakand is an Indian dessert made with milk and Indian cottage cheese called paneer. A lot of people also add solidified milk (mawa) to it but that's optional.
