For home cooks in the US, many westernized versions of this recipe use ricotta cheese for a reasonable fascimile in place of the paneer cheese. Traditionally palak paneer is a vegetarian Indian curry dish that is Medium/Hot in spice flavour using spices such as garam masala, turmeric, chilli, ginger and garlic.

Paneer is not always easy to find. Of course, you could make fresh paneer at home, as it's not that difficult, but tofu is a great option to substitute the cheese in this curry. In a large skillet, (a non-stick works great here) heat a few tablespoons oil or ghee and season the oil generously with salt and pepper. Pan-sear the paneer or crispy tofu until golden and crispy, and set it aside, covered with foil. Add onion, ginger, garlic and chilies, and sauté until deeply golden and fragrant, stirring.
