This recipe is a delicious mix of flavours, tastes and textures in each bite. Essentially it is an extension of aloo curry recipe where paneer cubes are added along with potato cubes in a mild spicy tomato based gravy. The taste and texture of pan-fried chopped onion, Indian curry spices, chopped tomato, boiled potato and soft paneer is further enhanced by addition of cashew nut paste. It goes well as a side dish with just anything rice or roti.

Steps to make Aloo Paneer:
  1. Fry potato and then paneer until golden brown and set aside.
  2. Oil in pan on medium heat. Add cloves and cardamom, stir for 1 minute. Add cumin. Add onion, ginger, garlic and green chili. Mix well until it becomes paste-like
  3. Add remaining spices (turmeric, chili powder, coriander powder, garam masala and fenugreek). Add salt. Cook for a minute. Add tomato purée and tomatoes and cook until thickened.
  4. Add water so sauce becomes a consistency you like and simmer for 4-5 minutes (If adding veg, add a little extra water, put the lid on for 10 minutes now). Add paneer and potatoes back to pan for 2 minutes. Finally, add cream for one minute then serve up with naan.
