- Prepare Pinch hing/asafoetida
Cooked rice is sauteed with vegetables and spiced with pav bhaji masala. Tawa pulao is popular Mumbai street food. All the pav bhaji stalls serves this delicious rice called tawa pulao. Instructions to make Tawa Bhaji:
- Wash all the vegetables, Heat oil in a kadai fry vegetables one by one. Keep aside
- After fry all the vegetables in a same oil fry onion, saute add tomato & ginger garlic paste. Mix well. Now add all dry masala one by one,pinch of hing. Fry masala well. If required sprinkle little water.fry masala till oil leave from the masala. Add dry methi & cooking cream. Now add all fried sabzi. Mix well.
- Now add few chopped coriander, mix well. Turn off gas. Now add remaining coriander.
As the name suggest tawa sabzi means array of seasonal veggies that are spread around a hot tawa/griddle and when asked that particular veggie gets all the attention 😉 - it is brought in the center of the griddle; tossed in masala, sprinkled with chaat masala and served to the guests right off the hot tawa. Tawa in hindi means a concave shaped pan. Now food cooked in tawa tastes different than the food cooked in a kadai or handi. While cooking, the veggies cook as well as caramelize faster in a tawa and thus that caramelized taste is felt in the dish. For best taste, I would suggest to make this recipe in a tawa.
