  1. Take 250 gms bittergourd
  2. Make ready 1/2 cup tamarind pulp
  3. Take 2 tbsp jaggery

  6. Make ready 4-5 curry leaves
  7. Take 2 red chillies
  8. Make ready 1 tbsp sambar powder
  9. Prepare as per taste Salt

This is a North Indian style karela fry recipe as I have used the spices which are generally used in North Indian cooking. Karela is also known as kakarakaya or bitter gourd or bitter melon. Karela Fry Dry roast cumin seeds, red chilies and let it cool down. Now take a mixer jar and grind it along with garlic pods and coconut to a powder and keep it aside.

Instructions to make Karela fry:
  1. Cut the bittergourd in ring shape remove seeds. Add salt mix it rest for 20 mins.
  2. After 20 mins add water squeeze all water from bittergourd.
  3. Heat oil add mustard seeds, urad dal, red chilli, curry leaves saute it
  4. Add bitter gourd give a mix. Cover with lid. After 5 min add turmeric powder. Cook until it becomes soft
  5. Add tamarind pulp and jaggery cook until bittergourd absorb the tamarind juice
  6. Add sambar powder give a mix for 2 mins. Serve hot tangy-sweet bitter gourd with rice

Heat oil in a pan and add chana dal and urad dal, fry them for a minute. Ingredients used in Karela Fry - Bitter Gourd Fry • Ginger garlic paste - tablespoons. • Salt - to taste. • Turmeric powder - teaspoons. Heat oil in a pan, add urad dal, green chilies, curry leaves, sliced onion, ginger garlic paste, turmeric powder, bitter melon, and saute it.
