Add sweet potatoes and sauté for two to three minutes. As the sweet potato gets cooked the milk will thicken. Add half the rose petals and green cardamom powder and stir and cook till the mixture thickens slightly. Add sugar and stir and cook till you get the desired consistency.

Steps to make Sweet Potato Kheer:
  1. Wash the sweet potatoes and then boil them for 3-4 minutes and let it remains in the water for 15 minutes after switching off the flame.
  2. Then peel off the skin and grate them. Now take a pan, add 1 tbsp of ghee and then add the grated sweet potato and toast them for 2 minutes and then add boil milk in it with few saffron strands.
  3. Now cook it until milk reduces half its quantity. Now add sugar and rose essence and cardamom powder and cook it for another 2-3 minutes.
  4. Now fry the nuts in a ghee for 30 seconds and add in a kheer and mix it well.
