Kheer (payasa, payasam or phirni) is a type of pudding from the Indian subcontinent made from milk, sugar, dried fruits, and rice or bulgur, tapioca, millet or corn. Rinse well then drain and set aside. Once the millet is cooked, just mash and see it should be soft then its done. Add cardamom powder and saffron strands.

Instructions to make Honey Sama Rice Kheer:
  1. Wash and Soak sama rice in water for 1/2 an hour.
  2. Boil milk. Add soaked sama rice and cook on low flame till it turn thick. Keep stirring.
  3. Add crushed cardamom. Strands of saffron, pistachio and raisins. Stir and cook for 2 minutes. Add honey and mix and stir for two minutes. Switch off the flame.

Traditionally, Rice Kheer is made with almonds, cashews, pistachios, and raisins. Quite frankly, I'm not a fan of pistachios and raisins in my Kheer since the flavor can be overpowering. With that was, I do add a few pieces of crushed pistachios as a garnish. This Kheer is made from Samak rice which are allowed to be eaten in Navratri fast.
