  1. First we have to roast amaranth seeds. Heat thick bottom pan with handle on medium - high flame. Add 1 tbsp of amaranth seeds (rajgira). Cover and let it puff. Pick up rotate it for few seconds. Keep on pan on flame, again pick up,rotate..so all seeds get puff up.
  2. Repeat this process similarly for remaining amaranth seeds. Seive them so unpuff amaranth seeds are separated. Keep aside.
  3. In same thick bottom pan pour milk keep it to boil. Add sugar and puffed/ roasted amaranth seeds.
  4. Dissolved saffron in hot milk. Pour in it boiling milk -amaranth seeds mixture.
  5. Cook on medium flame till thickens for 20-25 minutes stirring constantly. Cool to lukewarm at room temperature.
  6. Serve/Relish Delicious Amaranth Seeds Kheer garnishing with cashewnuts and raisins.
