- Heat 1 tablespoon ghee in a heavy Kadai.Or pan. Add broken sewaiyan or vermicelli.Stir and continuously roast 1 cup seviyan on a low to medium flame. Roast on a medium flame till the sewaiyan strands turn golden brown.
- Pour 1 liter milk in the kadai,, Milk can be hot or chilled or room temperature.Mix them very well. Simmer milk on a low to a medium flame. Stir occasionally so that the milk or sewaiyan does not stick to the bottom of the pan / kadai.Let the milk come to a boil.once the milk comes to a boil and sewaiyan cooked well that time add the condensed milk..Mix them properly.
- Now cook them for more some minutes..Now add the raisins and cashew in them..Vermicelli kheer is ready to serve..
The vermicelli kheer popularly known as seviyan kheer or semiya payasam is traditionally made from roasted vermicelli, milk and sugar as the main ingredients.
