- Take rice and sock it in water for ½ hour.
- Take a bowl put some kesar and add milk in it.
- Now take a pan add milk in it when the milk start boiling add rice in it.
- Keep stirring rice and milk in between till the rice get cook and the kheer consistency becomes thick.
- As the consistency becomes thick add kesar milk, sugar, cardamom powder,roasted dry fruits and mix all of these well.
- And cook it for 5 min and turn of the gas.
- Your kheer is ready.
Discard the water and heat the milk in the same pan and bring it to a vigorous boil. Kheer is Indian rice pudding made with only three basic ingredients- rice, milk and sugar. And I think that's the reason it is so commonly made in India because the basic ingredients are so readily available everywhere. Kheer and payasam are the terms used interchangeably and both are derived from the sanskrit terms "ksheer" & "payasa" both meaning milk.
