Rice kheer is easy to make and is made with a one pan or one pot method. Rice kheer is basically Indian rice pudding and makes for a creamy delicious pudding. To make the rice kheer, wash and soak the rice in enough water for half an hour, drain and keep aside. Discard the water and heat the milk in the same pan and bring it to a vigorous boil.
Instructions to make Rice kheer:
- Wash rice and drain the water
- In a small frying pan pour ghee and stir fry the rice for a minute.
- Turn off the flame and keep it aside
- Boil one litre milk. Then add rice and keep stiring.
- When the rice is half boiled add saffron sticks and cardomon powder
- When the milk thickens and the rice is soft add sugar and stir well.
- Turn off the flame and transfer it to another vessel
- Garnish with the nuts and serve
Kheer is Indian rice pudding made with only three basic ingredients- rice, milk and sugar. And I think that's the reason it is so commonly made in India because the basic ingredients are so readily available everywhere. Chawal ki kheer or rice kheer is a traditional rice pudding made for most occasions in Indian homes. Kheer and payasam are the terms used interchangeably and both are derived from the sanskrit terms "ksheer" & "payasa" both meaning milk. Rice kheer is made with full fat milk, rice, sugar and cardamom powder.
