  1. Get 700 gms chicken
  2. Make ready 1 1/2 tsp roasted cumin powder
  3. Make ready 2 tbsp coriander powder
  4. Get 3 tbsp kashmiri chilli powder
  5. Take 4 tbsp curds
  6. Make ready 2 tbsp ginger garlic paste
  7. Take 2 tbsp oil
  8. Take 2 tbsp ghee
  9. Take As required Whole spices (4 cloves, 3 green cardamoms, 2 bay leaves, 5 to 6 black pepper corns, 1 inch piece cinnamon)
  10. Make ready 1 1/2 cup fried onions
  11. Prepare 7 cashewnuts soaked in warm water
  12. Prepare 7 almonds soaked in warm water
  13. Get 4 tbsp curds
  14. Get 1 1/2 tsp garam masala powder
  15. Get As needed Salt
  16. Get As required Coriander leaves for garnishing

Korma, which means 'braising' in Hindi, is actually a style of cooking where meat and vegetables are braised in a sealed pot with a little liquid. Take a sharp knife and chop them into smaller pieces. You can also cut them 'tikka' style into large cubes. Season the chicken pieces with salt and pepper.

Steps to make Chicken Korma:
  1. Clean and wash the chicken & pat dry.
  2. In a bowl mix curd, cumin powder coriander powder, kashmiri chilli powder mix it well & keep aside
  3. Grind the fried onions with curd,cashewnuts, almonds into a paste adding water if needed
  4. Heat a pan add oil & ghee. Add the whole spices fry for a few mins.
  5. Add the chicken pieces & fry till colour changes,add ginger garlic paste fry till the raw smell is gone
  6. Now add the mixture of curd, cumin powder, coriander powder & kashmiri chilli powder. Cook for 10 to 15 mins.
  7. Now add the fried onion, cashewnuts & almond paste. Add salt & garam masala powder. Fry the masala well. Then add little water for the gravy. Cook till the chicken is done. Garnish with coriander leaves.

Put the garlic, ginger and onions in a small blender with a splash of water and whizz to a paste. Heat the oil in a frying pan over a medium-high heat and sear the chicken all over. Remove from the pan and set aside, then add the onion paste.
