Korma, which means 'braising' in Hindi, is actually a style of cooking where meat and vegetables are braised in a sealed pot with a little liquid. Take a sharp knife and chop them into smaller pieces. You can also cut them 'tikka' style into large cubes. Heat the oil in a large saucepan or frying pan.
Steps to make Chicken korma:
- First marinate chicken adding curd,1 tbsp garlic paste,1 tsp ginger paste, 1 tsp turneric powder 1/2 tbsp red chilli powder, lemon juice and 2 tsp oil. Keep aside for 1 hour. Add oil in the pan amd fry potatoes adding salt, turneric powder. Keep aside.
- Add ghee with oil. Add bay leaves,dry red chillies, pepper corn, cinnamon, cardamom into pan. Add chopped onion. Saute till golden brown. Add onion-ginger-garlic-green chillies paste. Cook well add marinated chicken and fried potatoes.
- Mix coriander powder, rest of the red chilli powder, turneric powder adding little bit water and add to the chicken. Add salt. Add kasuri methi Cook in high flame for 5 minutes constantly stirring. Then use lid and cook in low flame for 10 minutes. Then add 1 cup of water and cook another 5 minutes. Add sugar and garam masala powder. Put off the flame. Sprinkle coriander leaves. Ready to serve.
Once hot, fry the onion, cloves and cardamom pods for a few minutes until the onion begins to soften. Add the chicken, garlic and ginger and, after.
