Today's recipe is a beautiful Indian curry called Vegetable Shahi Korma. This curry is perfectly jeweled with beautiful colors speckled in creamy white gravy!

Instructions to make Haydrabadi veg.korma:
  1. Heat 1 tbsp butter in a pan. Crackle cumin seeds and add asafoetida.
  2. Now add all spices like bay leaf,dry red chilli, big elaichi,small elaichi, cinnamon,longs.
  3. Saute for 30 seconds now add big chopped onion,garlic,green chillies,ginger and tomatoes. After that add all masalas like haldi,red chilli powder, dhaniya powder,garam masala and salt.
  4. Saute for 5 mins and now add spinach and mint in it. Mix it and cook it for 6 to 7 mins or till spinach and mint leaves cook nicely.
  5. Off the stove and let it be cool. And than make a green paste from this.
  6. In same pan again heat 1 tbsp butter crackle cumin seeds and add dry red chillies and bay leaf. now add all vegetables. Saute for 2 mins and cover it with lids.
  7. Let it cook for 10 to 15 mins. After it's cook add green paste in it.
  8. Mix it well. And add 1/4 cup water in it. Cook for 2 mins. Now add paneer in it.
  9. Mix it and add fresh cream in it. Ready to serve.
