HOW LONG WILL MULLED WINE KEEP? Halve the vanilla pod lengthways and add to the pan, then stir in just enough red wine to cover the sugar. - Once hot turn off heat. Using a strainer remove the spices and orange slices. Tip: the spices can be reused for next time. Using a ladle pour the hot spiced wine into cups. Garnish with one or two orange slices and a cinnamon stick (optional). Serve and drink while hot.
Add the bay leaves and use a speed peeler to pare the zest of the lemon and oranges. Add to the pan, slice the oranges in half and squeeze in the juice. Pour in just enough of the wine to cover all the ingredients. Mulled wine was originally made to disguise the taste of wine that had gone bad, but that doesn't mean that you should follow in this tradition. Use a decent-quality wine, something soft, fruity and not oaky.
