  4. Remove pecans from the oven and set aside.
  5. Combine the buttermilk and mayonnaise in a bowl or jug.
  6. Put the cabbage, carrot and red onion (drained and dried on kitchen paper) in a large mixing bowl. Season with white pepper.
  7. Serve portions either with or without a few pecans, roughly broken, on top.
