As most Greek recipes, gemista require simple technique but demand high quality ingredients. Gemista is one of the most well known Greek comfort foods. On the other side, a Greek traditional cook would swear that gemista is perfect with medium-grain rice. This rice absorbs liquid easily while keeping the kernel intact. It is moister than long grain and fluffy right after it's cooked BUT it tends to clump up as it cools.
