Place a whole, cleaned chicken on a chopping board. Pour the marinade paste over the chicken, rubbing it well into all the cuts. Wash the chicken and pat dry. Mix together chili powder, ginger, garlic paste, pepper, jeera, honey, vinegar, butter and salt into a smooth paste.

Instructions to make Spicy roast Chicken:
  1. Gather all ingredients in using spices into a food processor and blend until a chunk of paste texture is formed.
  2. Wash and aid chicken to drain out excess liquid.
  3. Put chicken in a large bowl, add paste and massage together with chicken
  4. Allow to rest for 20-30 mins
  5. Set oven to 160 degrees
  6. Place marinated chicken to baking pan. Cover with aluminium paper ensuring that there are no uncovered space.
  7. Cook in the over for 30 mins or until chicken is tender as desired.
  8. For a script texture, remove aluminium paper after 20 mins of the cook process and back into the oven for extra 15mins. This will allow.the chicken to crisp.
  9. Serve with salad (optional)

Apply the chili paste all over the chicken, into the crevices and under the skin wherever there are gaps. If you have extra marinade remaining, you can use it to brush the chicken while it cooks. The original recipe did say to "Baste the chicken with the sauce", but we've made it clearer by specifying "Baste the chicken with the rum-lime. Mix the salt, pepper, oregano, basil, paprika and cayenne pepper together and sprinkle over chicken. Combine all the marinade ingredients in a bowl then pour over the chicken.
