The ingredients needed to make Vegetarian thali:
- Get For cauliflower vegetable
- Make ready 250 gms cauliflower
- Make ready 1 boiled potatoes

- Prepare 1 cup chana daal
- Get 2 tbsp rice

It is rightly said that "Simplicity is the ultimate form of sophistication". Items on the thali are chavli usal, khamang kakdi, alu vadi, chapatis, lemon pickle, dal rice (varan bhat) and rice kheer. Recipes for each of the dishes are given below. Festive Vegetarian Thali - consisting of tomato rasam, cucumber and moong dal salad, sprouted green gram and potato curry, mixed vegetable sambar, raw mango chutney, chana dal pakoda, chapatis, rice, sevai (vermicelli) kheer and rose coconut burfi.
Steps to make Vegetarian thali:
- First wash the cauliflower in warm water
- Now wipe it with clean towel and cut it into small pieces now take a pan add oil and green chilli, cumin seeds, sarso seeds and asfoited mix them then add tomatoes and cauliflower and salt and some water cover it for 5-7 min.
- Add boiled potatoes and all the spices and garam masala again cover for 3-4 min.
- Garnish with coriander leaves
- For dhokla
- Soak daal for 4-5 hrs then coarsely grind the dal
- Now cover the batter for 6-7 hrs for ferment then add 1 tbsp of oil, salt and eno mix well
- Now take a thali grease it with oil and add the batter now steam for 10 min. Cool the dhokla and cut it into pieces
- Now take a pan add 3 tbsp of ground nut oil and add seasame seeds curry leaves, sarso seeds let's crackle them then add red chilli powder and salt add dhokla
- Mix all the things very well and add coriander leaves

The recipe for each item on the thali is given below. Yes, it is not impossible to get a vegetarian Thali in Goa. It is not easy but you do get it at many places. Remove all the non-vegetarian food from a Goan Thali and you are left with rice, salad & sol kadi. Now add shallowly fried, semolina soaked Phodi made with local vegetables including banana, roots, and breadfruit.
