- Take 1 cup Semolina
- Get 1/2-3/4 cup Sugar

I have realized that I haven't shared some very basic Indian recipes on the blog. Suji halwa or rava sheera, as it is known in Maharashtra and some parts of India, is prepared in ghee and is sweet and rich. Soft, melt-in-the mouth, and delicious, suji halwa is often a part of festive meals including during Diwali and Navratri ashtami bhog. This Indian Semolina Pudding is also called as Rava Kesari or Rava Sheera in some parts of the country.
Instructions to make Suji Halwa:
- Heat up a pan, add ½tsp of ghee and dry fruits and roast them for a minute or till dry fruits changes its colour.
- Now to the same pan add in semolina and roast on low flame for 5 minutes adding in ghee gradually, roast the semolina till it turns golden in colour and nice aroma. On the other side put milk to boil.
- Now add sugar to semolina, dry fruits, cardamom powder and mix it. Lastly add boiling milk to the mixture, and let it boil on low flame till milk is absorbed.
- Garnish and serve hot.
Often during Puja or a festive ritual, Suji Halwa is prepared along with Panchamrit in most of the Indian households. Halwas are easy and delicious Indian desserts that have a pudding-like texture. They can be made with all kinds of ingredients (even ones normally associated with savory foods) ranging from lentils and veggies to fruits and grains. Garnish with shaved almonds or pistachio or shredded coconut, and let it cool for about a half an hour. Cut the Halwa in square or diamond shapes like burfee.
