Heat olive oil in a large skillet over medium heat. Add quinoa, jalapeno, bell pepper, zucchini, black beans, tomatoes, corn, chili powder, cumin, salt, broth, and stir together. Bring to a boil, then cover and reduce heat to low. Squeeze the roasted garlic cloves out of their skins and mash with some seasoning.

Steps to make Vegetable Quinoa:
  1. Soak quinoa in water for 10 mins.
  2. Now boil 500 ml water (water quantity should be double of the quantity of quinoa), transfer quinoa in it and boil for 10-15 min, the quantity of quinoa will get more than double.
  3. In another kadhai heat oil and add chopped onion, saute it till it becomes golden then add chopped tomato and capsicum.
  4. Now add chopped carrot and all spices, mix them and cook on low flame.
  5. Drain out excess water of quinoa and transfer it to the cooked vegetables.
  6. Mix all ingredients. Delicious and healthy vegetable quinoa is ready to serve.

Stir in the remaining oil, lemon juice and zest and season with sugar to taste. Drizzle over the quinoa and toss together with the roasted vegetables and parsley. Crumble over the feta, toss gently again and serve. Quinoa pulao is an wholesome & nutritious dish made with quinoa, mixed vegetables, spices and herbs.
