- Take 1/3 cup frozen peas
- Get 1-1.25 cups water
- Make ready as per taste salt
- Get 1 tbsp lemon juice

Instructions to make Quinoa upma:
- Take ½ cup quinoa in a fine strainer and rinse well in running water.
- Heat a pan on medium heat add washed quinoa, dry roast quinoa approx 5-7 minute on low heat
- Heat 1.5 tbsp oil in a pan. add ½ tsp mustard seeds. - once the mustard seeds begin crackling, then add ½ tsp cumin seeds, ½ tsp urad dal and ½ tsp chana dal. - Stir and saute on a low flame. saute till the dal‘s turn golden.
- Then add ginger, green chilies, dry red chilli and a pinch of asafoetida, saute for about half a minute on medium heat. - Now add chopped onion and 5 to 6 curry leaves.
- Stir and saute on a low to medium flame till the onions become translucent. - Then add chopped carrots, chopped french beans,zucchini and frozen peas. mix well. - Saute on a low flame for two minutes.
- Then add the quinoa. mix very well and cook for a minute on low flame now add 1.25 cup water, stir well. add salt as per taste and pepper powder
- Cover the pan with it's lid and simmer on a low flame till the quinoa seeds are a 3/4 cooked, now add broccoli, mix well
- Once or twice you can stir the upma while it's being simmered. now add lemon juice, mix well
- When all the water has been absorbed and the grains appear translucent and cooked well, remove the lid and switch off the flame.
- Add 2 tbsp chopped coriander leaves. - Give a quick stir and serve vegetable quinoa upma hot
You can also use cooked quinoa or millet and mix in the cooked and spiced veggies. Upma is can be made dryer if served as a side or wetter to serve on its own. Upma is savoury south Indian breakfast.
