The ingredients needed to make Beetroot Quinoa:
- Make ready 1 cup quinoa, boiled
- Take 1/2 cup beetroot, grated
- Prepare 1/4 cup carrot, grated

- Take 50 gm paneer, cubed
- Get 2 garlic clove, chopped
- Prepare 1/4 tsp ghee
- Make ready 1/4 tsp red chilli powder

Apart from the beetroot and quinoa this recipe also contains lentils for added texture and to balance out the sweetness of the beets. I used black (beluga) lentils but green lentils would work well too. I also used a bit of breadcrumbs and ground flaxseed to help bind all the ingredients together. If you are cooking the quinoa from scratch throw the lemon rind in during the cooking process.
Steps to make Beetroot Quinoa:
- Heat ghee in a pan. Add garlic and saute it for a min or till it turns golden.
- Now add beetroot and saute it on high flame for a min.
- Next add carrot and peas and mix well.
- Next add red chilli powder, cumin powder, black pepper & salt.
- Saute this on high flame for min.
- Add cooked quinoa and saute on high flame for 40 secs.
- Turn flame to lowest and cover with lid for a min.
- Turn off the flame and toss in the chopped paneer cubes into the dish.
- Serve hot with lauki ka raita/ dahi/Chutney.
If you're using frozen quinoa like me here, put the cold quinoa in a small saucepan with a little stock and the lemon rind and heat gently. Just before serving stir through the grated beetroot. The colour of the quinoa quickly stains the entire dish. Put the beetroot, squash and red onion in a large roasting tin. Cut the top off the garlic bulb (the garlic is for the dressing) and drizzle with a little of the olive oil before wrapping in foil and adding to the tin.
