- Cut and peel the mangos and remove the pulp. Puree in a small food processor or blender.
- Wash and soak quinoa in water for 3 to 4 hour,then boil with water for 20 to 25 minutes till quinoa cooked became soft drain the excess water.
- Add the quinoa and milk in a blender. Grind it into a fine paste.Transfer the ground mixture to a bowl.
- Heat ghee in a non stick pan. Add mix dry fruits sauté it for 1/2 to 1 minuet than Add the ground quinoa paste and add mango purée stir it continuously to form a crumbled sticky mixture with slight change in brown in colour.. stir well.
- When you see the crumbled mixture is nicely cooked and than add ghee,condensed milk and cardamom powder than cover the lid for 2 minutes in low medium heat. Than Mix well and and the mixture will start to loosen a little.ghee aside
- Put off the flame and grease the Thali with ghee then spread evenly 1/2” thick of quinoa mango cooked mixture and cool down for normal temperature,when this mixture is set cut with the help of knife like diamond shaped.
- Garnish it with desiccated coconut,finely sliced almonds and pistachio slices with mango, mango sauce and chocolate sauce.tasty quinoa mango fudge is ready for served.
You'll need perfectly ripe mangoes, just peel. As we all know Mango is a king of fruits and taste. It's excellent flavor, taste and aroma makes a delicious dessert. Mango and Coconut together makes a wonderful combination, milk helps to give a soft texture to the burfi.
