  1. First, wash and blanch the spinach properly.
  2. Now transfer into a mixer jar and make a fine paste keep it aside.
  3. Now heat the wok with oil then add coriander seeds once it crackle then add red chilli, ginger, green chilli and stir it for few minutes.
  4. Now add onion saute it until it becomes nice pink colour, now add paneer stir it few minutes on medium flame.
  5. Then add spinach puree and tamarind pulp, 1/2 tsp red chilli flakes, 1/2 tsp meat masala powder mix it well and then add roasted dry fruits again mix it properly.
  6. Then add cooked rice, salt to taste, mix nicely and stir it few minutes now reduce the flame.
  7. It's ready to serve it.

Mix in the paneer to coat it. Heat the oil in a frying pan and cook the paneer for a few minutes until crisp and golden on all sides. Serve palak rice hot with a side salad or pickle or raita. You can also garnish the spinach rice with some chopped coriander or mint leaves. Pan fried paneer or tofu cubes also go very well as a garnish.
