The ingredients needed to make Palak paneer:
  1. Prepare 4 cups Fresh Spinach leaves
  2. Get 200 gm Cubed Paneer
  3. Prepare 1 tsp Oil to cook paneer
  4. Prepare for the gravy
  5. Take 1 tbsp ghee
  6. Take 1/4 tsp cumin seeds
  7. Get 1 inch grated ginger
  8. Make ready 1 bay leaf
  9. Take 1/2 inch cinnamon stick
  10. Get 1 pinch soda bicarbonate
  11. Take 1/2 tsp Red chilli powder
  12. Make ready 1 tsp Coriander powder
  13. Get 1 tsp Paneer Masala Powder
  14. Make ready 3/4 cup Crushed tomato puree
  15. Take to taste Salt
  16. Make ready final tempering
  17. Get 1 tsp Ghee
  18. Prepare 1-2 pieces Dried red chilli

Heat the oil in a frying pan and cook the paneer for a few minutes until crisp and golden on all sides. Palak Paneer is a quintessential North Indian vegetarian dish made with cottage cheese and fresh spinach. Just the sight of white cubes of paneer peeping through the emerald green spinach puree will make your mouth water. Blanched and pureed spinach is cooked with select spices and the paneer is tossed in at the end.

Instructions to make Palak paneer:
  1. Clean the spinach leaves - Wash them nicely under running water - Take a big vessel, add water and keep for boiling.
  2. Add palak into boiling water and allow boiling for 2 minutes or until palak leaves become soft.
  3. Now take a strainer and drain off the palak. Wash under the running water and drop into ice-cold water. This helps to retain the green colour of palak.
  4. Transfer the blanched palak into the blender with 1 inch ginger and 1 chilli and blend to smooth puree without adding any water. keep aside for later.
  5. In a pan heat 1 tbsp ghee and saute 1 bay leaf, 1 inch cinnamon, 1 tsp cumin and stir until it turns aromat.
  6. Add a pinch of soda, coriander powder, red chilli powder, paneer masala powder and salt and stir. - Soda helps in retaining the green colour of palak while cooking.
  7. Now add palak puree and saute slightly till the rawness of palak goes.
  8. Add fried pieces of paneer and gently mix. - Let it simmer for sometime.
  9. Palak paneer is ready. - If you want can put some more ghee tadka on the top for extra rich flavor
  10. For frying paneer- take oil on a pan and place paneer cubes. Fry till slightly brown
