  1. Prepare 1 package spinach
  2. Get 2 medium tomatoes
  3. Take 1 medium onion, diced
  4. Prepare 250 grams paneer, cubed

  7. Take 2 dry red chillies
  8. Get 3 cloves

  13. Make ready 1 teaspoon ginger-garlic paste

  18. Make ready 1/4 teaspoon garam masala powder

It is very easy to prepare and can be made in so many ways. This is an easy and healthy palak paneer recipe which I finally arrived at after trying so many other recipes. Palak Paneer is a quintessential North Indian vegetarian dish made with cottage cheese and fresh spinach. Just the sight of white cubes of paneer peeping through the emerald green spinach puree will make your mouth water.

Instructions to make Palak Paneer:
  1. Steam and purée spinach and tomatoes separately. Keep aside.
  2. Cut paneer into 1/2-inch cubes, fry lightly until one side is slightly golden.
  3. Heat oil on medium heat, add bay leaves, dry red chillies, cumin, cloves, cardamom pods, and the cinnamon stick.
  4. Once cumin seeds turn golden brown, add the ginger-garlic paste, followed by green chilli.
  5. Add onions and a couple of pinches of salt, mix well with the cumin, ginger, garlic, and green chillies. Cover and cook for 2 minutes, or until onions become soft and translucent.
  6. Pour in the tomato purée and mix well. Add the turmeric, red chilli powder, cumin powder, coriander powder, and garam masala powder. Add a little more salt if desired - it’ll just help the tomato cook more thoroughly. Remember, all of these spices can be adjusted to your liking!
  7. Pour the spinach in, and don’t forget to scrape the sides of the blender jar!
  8. Mix well, and simmer for 5 to 7 minutes to let the flavours incorporate well. Taste for salt. Optionally, 1/4 tablespoon of store-bought Kofta masala can be used.
  9. Add paneer, mix well, then switch off the flame. Serve with a dollop of fresh cream.
