This is an easy and healthy palak paneer recipe which I finally arrived at after trying so many other recipes. Palak Paneer is a quintessential North Indian vegetarian dish made with cottage cheese and fresh spinach. Just the sight of white cubes of paneer peeping through the emerald green spinach puree will make your mouth water. Palak Paneer is one of the most popular paneer dishes.
Instructions to make Palak Paneer:
- Wash the Spinach thoroughly and keep it aside also defrost the paneer if it's kept in the fridge.
- Chop- Onion, Tomatoes, and Green Chillies.
- In a wok, add a tbsp of oil and once the oil is hot, add all the spices- first, Cumin seeds, Cinnamon, Cardamom and Cloves.
- Later, add Garlic ginger paste and saute it till the raw smell of it disappears and next add the chopped Onions and cook it till it turns translucent then add Tomatoes and Green Chillies, saute and let it cook till the tomatoes break down and turn mushy.
- Add Turmeric, Chilli Powder, dry fenugreek powder, cashews, salt, and mix it well.
- Now add the spinach and saute it well till the spinach goes all soft. Off the stove and keep it aside, let the mixture cool.
- Meanwhile, heat a pan and add a tsp of oil and a cube of butter. Add the paneer and fry them well. (This is optional, you can even add the paneer as it is, by doing this step it just gives the paneer a crispy coating.)
- Now, blend the mixture which was kept aside to cool down. Blend it well to a smooth paste.
- Heat the wok, add a tbsp of oil and once the oil is hot, pour the blended mixture, add half a cup of warm water and mix it well. Add Garam Masala to it and saute it for 2-3 mins till the oil starts to separate.
- Add the paneer and mix it. Finally, pour the fresh cream.
- Serve Hot.
- Goes best with Jeera Rice/Plain Rice or with Chapathi, roti or Naan.
