- Prepare 150 gm Potato
- Prepare 1 Cauliflower - medium size

- Get 1 tsp Garam masala powder

Steps to make Aloo gobi Masala:
- First step involves washing of cauliflower. Cut cauliflower into pieces and wash them in lukewarm water. Now peel off potato skins and cut it into cubes. Wash it well.
- Now boil oil in pan and temper it with Cumin seeds. Add potato cubes. Fry it.
- As potatoes becomes golden, add cauliflower in the same oil.
- Fry it till it becomes golden in colour. In the meantime prepare the masala paste for gravy. Blend tomato and ginger.
- Now add the masala paste in the pan. Add coriander powder, turmeric powder, salt and ghee.
- Let it cook in low flame. Don't cover it. As masala starts giving oil, add water.
- Now rise the flame and let the water boil. As water starts boiling, check the taste. Add sugar if needed.
- Finish it after adding some dollop of ghee.
Place in a large bowl, cover with cold water and set aside. Heat the oil in a medium-large lidded saucepan. Fry the onion, cumin seeds, star anise and salt for. Meanwhile, to make the aloo gobi, heat the oil and butter in a large heavy-based saucepan over a medium heat. Add the cumin, turmeric, ginger, onions, chillies and fenugreek and fry for a few.
