It is usually cooked with some spices and with onion and tomatoes. For a home version to keep it simple and healthy, i have steamed the aloo and gobi. But the taste of the deep fried dish is very good and lends a unique texture to both the veggies. In a vessel pour some oil to fry the Aloo & gobi.

Steps to make Fried aloo gobi:
  1. Cut the vegetables. Please wash the gobi in warm water.
  2. Now heat the oil in vessel. Crack the jeera, black pepper,loung,hing.keep the flame low to med.
  3. Now add the cauliflower and fry it for two minutes.
  4. Now add chopped potatoes and also fry for some time..also add green chilli and ginger.cover the lid for a minute.
  5. Add all the spices except amchoor and mix well. Cover lid and cook in low flame.
  6. When it becomes Cook add amchoor powder and garam masala. Cook in high flame and stirring continuously. now add coriander leaves.off the gas.serve with roti or chapati.

Rub some salt on Aloo & gobi & once the oil is hot fry them on medium to high flame till they are almost cooked. Drain & remove the fried aloo gobi on a plate lined with tissue paper to soak the excess oil. Meanwhile, to make the aloo gobi, heat the oil and butter in a large heavy-based saucepan over a medium heat. Add the cumin, turmeric, ginger, onions, chillies and fenugreek and fry for a few.
