The ingredients needed to make Pav bhaji:
  1. Take 2 onion finely chopped
  2. Make ready 1 cup mix veggies boiled(potatoes,peas,cabbage,cauliflower
  3. Prepare 1 capsicum chopped
  4. Get 1 tbsp ginger garlic paste
  5. Prepare 1 cup tomato puree
  6. Make ready 1 tbsp butter +butter for pav
  7. Take 2 tbsp oil
  8. Take 1 tsp red chilli powder
  9. Take 1 tsp cumin seeds powder
  10. Get 1 tsp coriander seeds powder
  11. Get 1/2 tsp turmeric powder
  12. Get 1 tsp pav bhaji masala
  13. Take 1 tsp chat masala
  14. Take to taste Salt
  15. Take 8-10 pavs
  16. Take Fresh coriander leaves for garnish

Potatoes, tomatoes, green peas all mashed together with spices and lemon and paired with buttery. Pav bhaji is a fast food dish from India consisting of a thick vegetable curry served with a soft bread roll. Vegetables in the curry may include potatoes, onions, carrots, chillies, peas, bell peppers, and tomatoes. Its origins are in the state of Maharashtra.

Instructions to make Pav bhaji:
  1. Rinse all vegetables well. Cut into small pieces. You can add vegetables of your choice.
  2. Take chopped tomatoes, onion and green chillies in mixture jar and make a fine paste. Keep aside.
  3. Take chopped potato, carrot, cauliflower, capsicum and green peas into pressure cooker. Close the lid and heat it on medium flame for 2 whistle.
  4. Switch off the gas. When the pressure released naturally open the lid. Smashed the vegetables gently.
  5. Heat the butter in pan on low flame. Add ginger garlic paste and sauté. Then add tomato onion paste and sauté.
  6. Add turmeric powder, red chilli powder, coriander seed powder and cumin seed powder. Stir it well.
  7. Now add chat masala and pav bhaji masala. Stir and cook for 5 to 6 minutes or till butter start separating from it.
  8. Now add boiled vegetables and mix well. Add water if required. Add salt and mix it well. Cover it with the lid and cook for 5 to 6 minutes.
  9. Switch off the gas. Add chopped coriander leaves. Bhaji is ready to serve.
  10. Cut the pav into halves. Heat the butter on tava and fry both side of pav.
  11. Transfer to the serving plate and serve with bhaji.

Variants of the dish may use other bread varieties such as chapati, roti or brown bread.. Pav Bhaji is a medley of mashed vegetables simmered in onion tomato gravy, special pav bhaji masala powder and lots of butter. Serve them with Ladi Pav Pav Bhaji bread, a dollop of butter on top of the Bhaji, along with chopped onions and lemon wedges. Some people call is Pau Bhaji, Paav Bhaji, Paav Bhajji, Pav Bhaji Masala. Pav Bhaji is popular Indian street food where dinner rolls/buns are served with spicy mashed veggies topped with dollop of butter.
