- Wash and grate cauliflower (use mini chopper for faster grating), finely chop onions as well.
- Heat oil in a pan, add cumin seeds and hing.. let it splutter then add turmeric, chilli powder and cumin powder..stir quickly, then add chopped onions and chopped green chillies and grated ginger and saute for 2 mins with the masala on low flame, then add grated cauliflower and salt and mix well on high flame till the water evaporates and the filling mix is dry. Add chaat masala and amchur powder chopped coriander and mix and let it cool.
- Make a soft dough with atta, salt and water… let it rest for 10 mins..
- Take a ball size from the dough and make a well..fill in the pyaz and gobi filling and close properly. Then roll paratha to make a circle and place on a heated tawa.
- Let it cook from both sides and apply ghee or oil and fry till golden from both sides.
- Serve hot with chutney or raita.
