Making a vegetable biryani can be as simple as making it in a pressure cooker or one that is prepared with a fresh ground masala and dum cooked like the one shown in this post. Instructions to make Veg Dum Biryani:
- Wash and soak the rice for 1/2 hr. Boil water in a big vessel. Once water starts boiling, add green cardamom, cinnamon stick, green chillies, mint leaves, coriander leaves, ghee and salt. Then add the rice. Cook it till 3/4 of the rice is done. Strain the water and keep the rice aside.

Now in a vessel add oil add the fried onions keeping 1 tbsp of fried onions aside. Add the marinated vegetables. Mix well cover and cook for 1 min. Then add the cooked rice.
- Now top it with fried onions, roasted cashews, saffron milk and mint leaves. Now take some dough and roll it and place it on the edges of the vessel in a circular mode. Now cover the lid tightly and keep it on dum for 35-40 minutes on a very slow gas.
- When done allow it to cool little so that the excess air is released and then open the lid, remove it in a plate and serve with raita. Enjoy the delicious veg dum biryani.
One that will use up most of the vegetables and add so much flavour. I use my basic biryani recipe and swap the veg for whatever I have.
