- Take 1 cup basmati rice

- Make ready 2 tbsp ginger garlic paste

- Take 2 tbsp jeera powder
- Take 2 tbsp dhania powder
- Get 1 tsp saunf powder
- Prepare 1 tsp Kashmiri red chilli powder
- Prepare 1/2 tsp turmeric powder
- Make ready 1 1/2 tsp salt or to taste
- Make ready 1 tbsp lemon juice
- Take 2 bay leaves (tej patta)
- Prepare as needed Oil for deep frying
- Get 1 tsp kewra essence
- Take Garam masala
- Prepare 2 black cardamom
- Take 6 green cardamom
- Take 1 inch piece of cinnamon
- Get 5 cloves
- Get 10 peppercorns
- Get 1 star anise
- Make ready 1 pc mace
In a pan heat three tbsp of oil and fry the sliced onions until golden brown. Remove from the pan and drain on. Biryani is a classic & everyone's most favorite dish. And as a vegetarian, it is quite difficult to get a good biryani outside.
Steps to make Subz Biryani:
- Soak the rice for half an hour. Boil it with a bay leaf and a teaspoon of salt until it is 80% cooked. It should be grainy when mashed between fingers.
- Deep fry two sliced onions until golden brown and keep aside.
- In the same oil, deep fry the paneer pieces and the potato cubes until they colorize.
- Heat 3 tbsp of oil in a flat bottom pan. Use the same oil you fried the onions in for extra flavor. Add in the bay leaf, the whole garam masala, and the whole jeera.
- When they start to crackle, add in one sliced onion and saute until it changes color.
- Add in the ginger garlic paste and green chillies. Cook for a minute.
- Add in the vegetables and saute for a minute.
- Add the jeera powder, dhania powder, saunf powder, Kashmiri red chilli powder, turmeric powder, and salt. Mix well.
- Add the curd and the paneer. Save some paneer pieces for the top layer. Mix well.
- To arrange, first switch off the flame. Top the vegetables with half of the fried onions, chopped coriander leaves, and mint leaves. Save some for garnish. Cover it with the boiled rice.
- Top the rice with coriander leaves, mint leaves, fried onions, and the remaining paneer pieces. Add a tablespoon of the onion flavored oil and the kewra essence.
- Cover it with a lid. Switch on the flame and cook on high for 2-3 minutes. Reduce the heat and cook for 3-4 minutes. Switch off the flame and let it rest for 5 minutes. Remove the lid.
- Subz Biryani is ready to serve. Garnish with lemon slices and chopped coriander leaves, mint leaves, and the fried onions.
