- First take a bowl add grated cauliflowers, potatoes and grated paneer and all the seasoning and salt mux all togther and add Cornflour combined all togther and make a dough and then deep fry till it become golden in colour
- Now take a woke add 1 tbsp oil add grated ginger garlic paste saute for a few sec then add onion for faster cooking add littke bit a sugar..then add our tomatoes cook till it become soft and mushy.when its done cool down the masala and make a paste.
- Then in a same pan add 2 tbsp oil add our species dont the masala burn immediately add tomato onion paste cook till it looae out its colour and cover it abt 10 min.after 10 min remove the lid add fresh cream garam masala,dry kasuri methi and mix it properly.if the gravy is too much thick add 2-3tbsp of water and let it be coojed for 10 min and till in gravy 1 boiling come
- Now our gravy is ready..whenever you want to srve it pour the gravy in a serving add the koftas again pouring the gravy and serve it with chopped almonds and fresh coriander

These cauliflower kofta are part inspired by falafel and part inspired by classic Indian potato-based kofta. Steamed cauliflower is mashed with chickpeas and Indian spices like cumin and coriander.
