Peel and thinly slice the garlic and onion, then finely slice the chilli. Heat the oil and butter in a large frying pan over a low heat and sauté the garlic, onion and chilli till softened.

  4. Now in another karahi heat 1 tbsp oil and put cumin seeds and when cumin seeds splutter put finely grated ginger and sauté for 1 minute. Now add grated tomato and sauté till oil leaves the karahi. Now add salt, red chilli powder, turmeric powder and garam masala and mix well.
  5. Now add fried potatoes and cauliflower stir well so that mixture is coated well. Add little water and stir. Cook for 2 minutes and then switch off the flame.
  6. Serve hot with chapatti or parantha.
