I've played about with this dish over the years to finally create (in my opinion) the best Chicken Biryani there is. Authentic and aromatic, this dish contains fresh ingredients and will make you want seconds! For a milder dish (as this one is quite hot), leave out the dried chilli flakes. Heat the oil in a large saucepan over a low heat.

Instructions to make Chicken biryani:
  1. Marinate chicken in a mix of yogurt, chilipowder,cinnamon,masala,ginger garlic paste,turmeric and cinnamon,paprika,lemon juice, vinegar, salt and pepper for 1/2 an hour.
  2. In a large pot, heat oil and add the spices ; masala, cinnamon, bayleaves cardamom and cloves.
  3. On high hight, add the chicken and fry on both sides untill golden then add all the rest of yogurt and. Cover and reduce heat (low heat) untill half done (for around 15 minutes). Then add potato cubes and stir.
  4. Add the rice with the rest of the spices, then add water or stock and bring to boil. Then cover untill well cooked.
  5. Serve hot with Riata. And garnish with Parsely and spring onions

Cut the chicken into bite-size pieces, tip into a bowl, and add the lemon juice, garam masala, chilli powder and salt. Marinate the chicken in greek yoghurt, turmeric, chilli powder and salt. Heat the oil in a heavy bottom saucepan over medium heat. Add the green cardamom and cumin seeds fry for a few seconds. This is a biryani (or biriyani) from Northern India made by marinating the chicken in yoghurt and brought to life with aromatic flavours and a sauce created from some amazing whole spices.
