Return back to the pan with the vegetables that are cooking and add the ginger paste and the garlic paste. Once vegetables are soft, decant into the pan with the cooked masala, then using a potato masher begin to mash the vegetables until all well Incorporated.
- Garnish with the remaining butter, fresh coriander and finely chopped onion. This is then served with a buttered pav (roll) that is fried on a tawa (skillet or frying pan).
