Undhiyu, a traditional Gujarati curry prepared with many fresh vegetables and dhokli muthiya, is a must have item on festivals like Uttarayan (kite flying festival), Diwali, etc. and special occasions like marriage parties. Undhiyu is a one pot vegetable casserole dish that is the hallmark of Gujarati vegetarian cuisine.

To get started with this recipe, we have to first prepare a few components. You can have undhiyu using 24 ingredients and 6 steps. Here is how you cook it.

The ingredients needed to make Undhiyu:
  1. Take 1 tbsp dry peas
  2. Take 1 tbs dry dal (broad beans)
  3. Take 1 tbsp dry kala chana(chickpeas)
  4. Get 1 tbsp dry lobia
  5. Get 1 tbsp dry red dal
  6. Get 2 tsp ginger garlic and green chillies (crushed)
  7. Make ready to taste Salt
  8. Take 4 tbsp oil
  9. Prepare 1/2 tsp turmeric powder
  10. Prepare 1 tsp Garam masala
  11. Prepare 2 Raw Bananas
  12. Take 2 medium size potatoes
  13. Get 1 Bowl Muthiya
  14. Take 1 tsp Red chilli powder
  15. Get 1 medium size Brinjal
  16. Get 1 yum
  17. Prepare To make Muthiya
  18. Make ready 1 Bowl Besan(Gram flour)
  19. Get 1/2 Bowl Fenugreek leaves
  20. Take 1 tsp ginger garlic (crushed)
  21. Get to taste Salt
  22. Take 1/2 tsp Turmeric powder
  23. Prepare 1 tsp Red chilli powder
  24. Make ready as needed Oil to fry

Undhiyu puri is one of the best winter dishes. It is Gujarati traditional food at its best. Basically,it is a mixed vegetable curry.

Steps to make Undhiyu:
  1. To make Muthiya, mix all Muthiya ingredients together. Make a hard dough. Take a small portion and give shape like Muthiya and fry on medium-low flame. Keep it ready.
  2. Soak all the dry ingredients for overnight or minimum 8 hours. Chop all vegetables into big pieces.
  3. Take a heavy bottom cooker. Add oil, crushed ginger garlic and green chillies and asfoitida. Saute for some time. Add red chilli powder turmeric powder and Garam masala
  4. Now add all soaked grams. Add vegetables.
  5. Add fried Muthiya. Salt and half glass water. Close the cooker and give 5-7 whistles. Let it cool. Open and mix it softly.
  6. Serve with Roti or Puri or Paratha

We cook it slowly in green pesto. Eat it with fried flat bread. It makes a heavenly combination when served with 'Shrikhand'. Traditionally you serve it with dollops of white butter or 'ghee'/clarified butter. However, you can also make it vegan by just avoiding ghee in.
