- Take For kadhi -
- Prepare 1 cup yoghurt
- Take 2 tbsp chickpea flour
- Make ready 2 cups water
- Make ready 2 tbsp oil
- Take 1/4 teaspoon mustard seeds
- Prepare 1/4 teaspoon cumin seeds
- Make ready 1/4 teaspoon fenugreek seeds
- Get 1/4 teaspoon hing/asafoetida
- Get 6-8 curry leaves
- Take 1 tbsp coriander leaves
- Get 1/2 teaspoon ginger paste
- Prepare 1/2 teaspoon garlic paste
- Take 1/4 teaspoon turmeric powder
- Make ready 1 teaspoon red chilli powder
- Prepare 2 teaspoon coriander powder
- Prepare to taste Salt

Khichdi is the comfort food that is prepared in almost every household. Vegetable Masala Khichdi is its variant loaded with veggies, to make it more wholesome and filling.
Steps to make Masala Khichdi and Kadhi:
- First of all mix rice and yellow moong dal and wash it with clean water 3 to 4 times.
- Now heat oil in a pressure cooker and add all the whole spices. Now add mustard seeds and let it crackle. Add hing and thinly sliced onion and saute it until the onions are brown in colour. Now add turmeric powder, red chilli powder, garam masala and salt to it and mix it properly. Add chopped potatoes and pigeon peas to it and give it a good mix.
- Now add rice and dal to the pressure cooker along with 4.5 cups of water and mix everything well. If you want rice grains separated then add less water.
- Now Cover the pressure cooker and cook it until three to four whistles on high heat. Let the pressure come down itself then only open the pressure cooker.
- To make kadhi, add yoghurt and chickpea flour in a bowl and whisk it so that no lumps are left. Now add two cups of water and whisk it again.
- Heat oil in a pot and add mustard seeds, cumin seeds and fenugreek seeds. When the mustard seeds crackle, add hing, curry leaves and coriander leaves to it. Now add ginger and garlic paste along with turmeric powder, red chilli powder and salt. Saute it for half a minute and pour the yoghurt mixture to the tadka and cook it on low to medium heat continuously stirring it.
- When it gets the first boil, add coriander powder and mix well. Cook for two minutes and turn off the heat. You can add some water to adjust the consistency according to your choice if needed.
- Serve hot masala khichdi and kadhi along with ghee, papad and pickle.
Khichdi can be prepared in two ways : one with rice and yellow moong dal and another is by combining rice and split moong dal. We are using the former ingredients. In below photo, masala khichdi is served as a meal with gujarati kadhi, pickled green chilies (rai kuria marcha) and roasted rice papad (khichiya papad). Meantime prep rest of the ingredients.
