- Take 7-8 tbsp flour
- Prepare 3-4 tbsp corn starch
- Get 1 tbsp rice flour
- Take 1/2 tbsp baking soda

Add the lemon juice, then gradually. Make a paste by blitzing the chilli, ginger and tomato together, then set aside. Pakora is a traditional Indian fritter made with vegetables that are coated with a crispy batter. Usually deep fried, they are also known as pakoda, pakodi and bhaji and served as a snack or appetizer along with a dipping sauce or chutney.
Instructions to make Baked Vegetable Pakora:
- Chopped carrot, onion, potato, green chilli and ginger finely. Also chopped coriander leaves finely.
- In a bowl add flour, corn starch, rice flour, salt, cumin powder, ajwain seeds, red chilli powder, turmeric powder and baking soda. Mix them well with water. Make a thick batter. Also mash the boiled chickpeas and mix with the batter.
- Add all the vegetables in the batter and mix them very well. Also add lemon juice and mix them.
- Pre heat the oven at 400°F/205℃.
- Cover the aluminum foil on the tray. Spray/ brush with oil on the foil. Now take a small portion from the batter and place it on the foil.
- Bake the pakora for 30-40 minutes or until the pakora is ready. Check and turn over the pakora in the meanwhile. The pakora should not be burned.
- Sprinkle some chat masala on the pakora. Serve the pakora with sauce or chutney. I serve it with mango srikhand.
