- Prepare 1 cup all purpose flour
- Prepare 1 cup semolina

- Get 1/4 tea spoon sugar

Take a blender jar, put in a handful of coriander,mint,green chili and ginger and a glass of water and blend to a paste. Strain it, and keep the residue aside. Residue is very flavorful, we'll use that in masala/filling. Take a big mixing bowl, add in the strained paste along with rest all the rest ingredients and mix well.
Steps to make Paani Puri(Kolkata Style):
- Make a tight dough by mixing semolina, flour, baking soda and water. Rest for 20 minutes
- Divide the dough into small portions, make small-sized puri using a roller. Let them rest for 20 minutes before frying. This will help to puff all of the puris
- Heat the oil and deep fry. Keep fried puri after frying in open sunlight for 30minutes. This will make the puri more crunchy
- Mash the boiled potatoes mixing 3/4th of the all spices,chick peas,onion,salt,rock salt
- Add the tamarind pulp, lemon juice, rest of the spices,salt, sugar, black salt into 2 cupS of water.mix it well
- Break the puri,insert a small portion of mashed potato,dip into tamarind water and serve.
Calcutta Style Puchka or Golgappa or pani puri, is the king of street foods. Street food is like ultimate moksha to me, however depressed I am, feeling low, one thought of golgappa or chat or any street food brings a sparkle in my eyes.
