The ingredients needed to make Pani Puri Chaat:
- Take 50 Sooji puris (homemade or store bought)
- Get 1 bunch Pudina/ mint
- Prepare 1 bunch Coriander leaves
- Make ready 4-5 Green chillies
- Take 1 cup Boiled black chana or sprouted moong or chickpeas
- Prepare 1/2 :cup Tamarind pulp
- Take 2 cup Jaggery
- Prepare 3 Boiled potatoes medium
- Make ready 6 cups Cold Water
- Prepare As per taste: black salt, chilli powder, mango powder
- Take As per taste cumin powder, fennel powder,
- Make ready As per taste: ginger powder, coriander powder, Black pepper,
- Take 2 tablespoons Chopped coriander
- Take 2 tablespoons Lemon juice
- Take 1 tsp Cooking oil
- Make ready to taste Salt
- Prepare as required Khara Boondi for garnish
The spicy and tangy water served along with paani puri recipe can be prepared with numerous types. I have posted pani puri puri recipe in my sev puri recipe itself. But the post is too long with sev puri recipe, sweet dates tamarind chutney recipe and this puri recipe. So thought making a separate post.
Instructions to make Pani Puri Chaat:
- Wash the green leaves and roughly chop them. Chop the chillies. In a blender jar, add all, along with oil, lemon juice, a little water and blend to a paste.
- Add cold water as per desired consistency and blend again. Strain the mixture in a bowl. Add all the spices as per taste. Stir well. Now the green spicy pudina water is ready.Keep in fridge.
- To make sweet tamarind water, mix jaggery, tamarind pulp and add 2 cups cold water. Mix well till Jaggery is dissolved. Strain the mixture. Add the above-mentioned spices as per along with cold water as per taste. Keep in fridge.
- To make potato and chana filling for puris, mash the boiled and peeled potatoes well with a masher. Add boiled chana/ sprouted moong and chopped coriander leaves and mix well. Add spices as per taste. Make them into small balls for easy stuffing.
- Assemble the green water, garnish with khara Boondi, tamarind water and potato filling in serving bowls. Keep puris in a basket. To serve, break puri in center, add some potato balls stuffing, pour spoonfuls of both the prepared waters and serve the yummylicious Paani Puri chaat!

Assemble Pani Puri: Take each puri and gently make a large hole on its top-middle side with a spoon or your index finger or thumb for stuffing. Stuff it with masala (more or less, as you like).
