Top with courgette slices and then add the asparagus. Brush the pastry border with the egg and milk. Put the courgettes, pepper and red onion into a large bowl. Add the garlic and herbs and season generously with salt and pepper.

Instructions to make Courgette and Asparagus Tart:
  1. Thinly slice the courgettes and add to a large mixing bowl with the asparagus and salt.
  2. Roughly chop the dill, the add the lemon zest, pepper and oil to the bowl. Mix well with you hands.

  5. Then thinly slice the goats cheese and layer onto of the courgette.
  6. Finally, add the asparagus and a little more black pepper.
  7. Place in a preheated over at 180degC for 30 minutes. Leave to cool for a couple of minutes, then serve.

Line a large baking tray with baking parchment, lay the vegetables. Lay the sheet of puff pastry over a baking tray and pierce it with a fork over the base. Wash the asparagus and the zucchini. Slice the zucchini finely then put the vegetables over a greased baking tray and pour plenty of olive oil over them. Next, beat the eggs together with the cream and grated Cheddar cheese and season with salt and pepper, then pour this mixture over the asparagus.
