  4. In pot or pan mix lentils, sweet potatoes, pesto and chopped fresh basil. Heat all up on low heat. Finish with lemon juice
  5. Blanch asparagus in boiling water.
  6. When everything ready serve

Meanwhile, heat the remaining oil in a small pan over a medium heat and add the garlic. Add vegetable stock to deglaze the skillet and bring to a gentle simmer. Add the salmon to the roasting tin and scatter over the lemon zest. Cut the tomato vine into four and add to the tin. Squeeze over a little lemon juice, then add the wedges to the tin.
