The ingredients needed to make Cherry Pies:
  1. Make ready 1 sheet gluten free pastry
  2. Take 1 egg beaten
  3. Get 450 g cherries stones removed

  6. Get 2 teaspoons cornstarch dissolved in 1 tbsp water

In a saucepan over a medium heat combine the cherries, demerara sugar, lemon zest, juice and nutmeg. Filled with the flavours of Christmas, these little cherry pies will be a seasonal hit. Steps to make Cherry Pies:
  1. Place the cherries, sugar and lemon juice in a saucepan over a medium heat - Simmer for 20 minutes then stir in the dissolved cornstarch
  2. Cook until the sauce thickens, about 5 minutes - Set aside while you prep the pastry
  3. Preheat the oven to 180 oC
  4. Roll out until the sheet of pastry - Cut out 12 equal sized circles
  5. Spread the cherries onto six of the pastry circles leaving about 1cm of space around the edge of the pastry, this stops the filling leaking everywhere when you bake the pastries
  6. Brush the space you have left at the edge of the pastries with the beaten egg - Place the remaining six circles of pastry on top of the filled slices
  7. Seal the edges by pressing down with a fork all the way round the perimeter - Place on a baking sheet lined with parchment paper
  8. Cut a little steam hole in the middle of ech pastry - Brush the pastries with the beaten egg and sprinkle on a little extra sugar if you like
  9. Bake in the oven for about 15 minutes or until golden brown - Serve dusted with a little icing sugar

Brush the pastry edges with water. Roll out the remaining pastry and use to cover the fruit, making a hole in the centre. Press the edges to seal, trim off the excess pastry and crimp the edges with your forefinger and thumb. Spread cherry filling in an even layer onto pie crust, and dot with butter on top.
